Sadie thinking: I want that toy, I want that toy, I want that toy. Can’t wait to get my own pet. This stuff is useful!

Wait! She lay down when she was told to sit/stay. That is a break of a stay. She changed position just as much as when she stood up. Also, maybe this exercise could be demonstrated with a high energy 20 month old puppy rather than a old, ready to fall asleep Lab. I think most folks would want to keep their dogs on leash to start.

    Hi!
During the training session, the “stay” hand signal was used several times during the same task, is it a risk to “wear it out” as with vocal cues?

what if your dog is not as good as Sadie and keeps following you or running away from you? How do you make your dog understand what “stay” means in the first place?

I would say it’s not the same thing, because she’s not repeating it over and over like “stay, stay, stay” and standing over her – she’s doing other things like walking back when using the cue.
